From the highlands of Panama, Geisha coffee is a scarce (and therefore supremely sought-after) variety of coffee. Its origins can be traced to the Gori Gesha region of Ethiopia, but ever since the 1960s, the coffee has been produced in Panama at the world-renowned finca at Hacienda La Esmeralda. In fact, in 2004 Hacienda La Esmeralda took home the gold in the Best of Panama competition with their Geisha coffee. Today, however, Geisha coffee is also produced in Mexico and the roast is being served exclusively in the cups of guests at Guaycura Boutique Hotel Beach Club & Spa.
How exclusive are we talking? The award-winning brew sold in 2022 for more than $6,000 a pound. The coffee is the first harvested by third-generation grower Pablo Gonzalez, whose cultivation began four years ago in Mexico’s Huatusco region of Veracruz, one of Mexico’s most important coffee-growing regions.
The beans are grown near regional trees that naturally protect them from pests and provide them with shade and nutrients, as well as some notes of flavor and smell. Being an example of “companion planting” minimizing the use of agrochemicals.
Part of what makes Geisha coffee so special is the honey processing. This involves removing the outer skin of the coffee cherry, leaving behind some of the sticky, sweet fruit pulp that surrounds the bean. The beans are then laid out on raised beds to dry. As the beans dry, they absorb some of the sweetness and complexity of the fruit, resulting in a coffee with notes of caramel, honey, and fruit.
What’s more, the process is much more environmentally friendly than other processing methods, using 90 percent less water than traditional wet processing, which is a strain on water resources in coffee-growing regions.
Bringing it home to Baja, Geisha coffee is roasted by the experts at Baja Beans, in Todos Santos, where it is perfected in a light to medium roast, allowing the subtle, yet complex character to shine through while creating a balanced acidity and sweetness.
The best way to enjoy a cup of the world’s best coffee is to settle in for a homemade breakfast at Guaycura’s El Jardin Cafe. Here you will be able to spend a pleasant and relaxing moment in a garden located in the heart of the magical town. The restaurant is open seven days a week from 7 a.m. until 12 p.m., except for August and September when the hours depend on the weather.
